I came to learn on a 2 week course after having just under a years worth of experience as a pizzaiolo in a self-taught pizzeria. Ricardo has been an excellent teacher and has really helped me to take my journey with pizza to the next level. A good balance between theory and practical makes the course engaging and fun. Ricardo’s knowledge in details is a real bonus for any student as I’m sure less intimate schools will rush through or miss things that can make a great pizzaiolo compared to a good one. All in all the experience has been very good with great vibes and an excellent place become a pro! I left feeling much more confident about my pizza making skills and now I have the knowledge to overcome any problems that I might encounter, all thanks to Ricardo!

I've just completed two weeks at the Italian Pizza School and couldn't recommend it more. I originally chose the course as from the options I could find in the UK it seemed the most comprehensive and this is exactly what I received. (From different starters, to dough hydration, shaping/stretching, oven management and cooking, even including advice on how a pizza kitchen should be set up from scratch and the logistics of operating each day)
Ricardo is incredibly knowledgeable on the topic and passionate about teaching others. Having discussed my background prior to the course and again on day 1 he constantly tailored the course to my ability and for what I wanted to learn from it.

This course was the best investment in my new pizza business. Richard is a great teacher. He explains, he demonstrates and then you get plenty of time to make pizzas. If you want to learn the craft of pizzas then Richard is the best choice. You get to train in a real pizza kitchen, which is also a busy, successful London takeaway. Ricardo is a great teacher and genuinely cares that his students gain the knowledge they require. He is very professional and knowledgable about the subject and can assist with any other related questions such as pros and cons of different types of pizza ovens, layout of the kitchen, other variables you should take into account such as temperature of the room etc. Also, he was very accommodative to our timetable and needs. We had a limited time to do the course as we were travelling from abroad and he worked around our timetable and tailored the course according to our needs and time available at a very short notice. At 40 years old I decided on a career change and having always held aspirations to run a food business one day, I chose Pizza as my food of choice. I run a wood fired pizza company and although we had some experience with regards to working with dough and the fact that we had been making pizzas for a few weeks prior to Ricardo arriving, the small details that Ricardo picked up on was great. Very clear, patient and friendly in the way he teaches and explains things, we made some minor adjustments to the process and the results blew us away. The Margarita pizza Ricardo made for us was 😍😍😍😍. The process shown to us on how to work with the dough, the quantities of ingredients to use to get the perfect pizza and the fact that I know Ricardo is only a phone call away is awesome. Making pizza like a pro with a pro! Ricardo came to my house to train me as an amateur one day course. It was the best thing I have ever done. I learned how to make pizza and the science behind it all, from scratch, with top quality Italian ingredients and the best part was to try them all with my family, around 10 in total with a variety of toppings. THE BEST PIZZA I HAVE EVER EATEN!!! Ricardo is a great teacher trainer, very hands on, very experienced and explains everything step by step in a nice simple way. I attended Pizza training with Riccardo over 4 days in order to learn a good foundation of Pizza making in order to make the best use of my Fuego Garden Pizza Oven.
Riccardo was extremely detailed in asking me about the oven, what my aims were and what level of previous experience I had - which was none!
With his thorough approach, the training was very well organised and structured to suit my needs specifically.
Over the 4 days Riccardo taught me much more than I was expecting to learn. His style of teaching goes from the basic foundations up to extremely detailed and high level knowledge of Pizza making. His explanations and demonstrations allowed me to pick up the knowledge and practical skills quickly - much more quickly than I had anticipated and this was certainly down to Riccardo.

I have just completed the Italian Pizza School run by Richard Regalado. I came from Scotland for the course. I had some catering experience in my past and was keen DIY pizza maker at home. My goal was get professional training to seek employment in a pizzeria immediately after completing the course.
I found the location of the school very convenient. The fact that the school is in London and students do not need to travel abroad, especially in post pandemic time is convenient. i liked the fact that my initial inquiry about the course was answered by Richard, who runs the course and it was done promptly, almost immediately. The actual lessons are held in real pizza takeway shop, that I believe generates huge turnover for the company its belongs to. This is also educational and helps to understand how your premises have to be set up for your own business.
The training was second to none. In my case, I was very lucky and it was one to one. It was tailored for my needs, taking in consideration level of experience I had. It was very intensive and precise, with every minute packed with activities, such as learning the process of making dough, temperatures control for each step, timing, shaping the pizza balls, stretching and cooking pizzas and repeating the steps that have to be repeated again and again.
Richard not only put a lot of work in my training, but also helped me to get some real life work experience in a pizzeria hrough his extensive network of business contacts .
Richard's approach is professional, freindly, informal, very flexible and delivers the result.
After completing the course, I have confidence to go to work in pizzeria. I would recommend the courses in Italian Pizza School run by Richard Rigalado and I am planning to keep in touch, for consultations and advice.

Today I had the pleasure of meeting Ricardo and to learn how to make pizza properly. I’ve been making pizzas since Christmas and reading things on the internet about what’s to be used when making the dough and to be honest I was starting to struggle so I looked for a pizza school and Ricardo came up and my god am I glad he did. He came to my house and taught me how to make pizza from start to finish and he definitely knows his stuff. He was with me for about 4 and a half hours and it was fantastic. The last three weeks have been such an inspiration and such a must for anyone starting up there own pizzeria or if you are just a lover of pizza. Ricardo knowledge and passion is extensive and inspiring, he really is a master of his craft. Every stage of the training was clear and very easy to understand but this is due to Ricardos patience and knowledge which is essential in his role. Any questions I had for him, he answered. I luckily had a chance to go back to work after two weeks for one week and have a go at making the dough, stretching, topping and cooking. This was great as when I came back for the final week, any problems I had he addressed and gave me tips and solutions to overcome them for when I return. A true gentleman, family man and now new friend. I look forward to him coming to see me and see how I've evolved in this business. Ricardo's pizza 3 weeks course was the best training I ever had, he is professional,calm and he knows everything about pizza and also how to run a restaurant business.In the end of the course I was able to work as a professional Pizza Chef with a large knowledge about dough, stretching,cooking, the speed of the service time also a lot of knowledge about pizza as a business.In the last day Ricardo was asking me still what else I want to learn, and honestly I didn't know what to ask him to show me no more because he taught me everything, everything that a course can offer.I fully recommend

I’ve been making pizza for a while but was struggling to stretch dough quickly and evenly during busy service. I did a 4 hour lesson with ricardo to improve my technique. I found his pointers and explanations about the nature of dough to be invaluable to help me understand where I’m going wrong. It’s given me more confidence to keep practicing in the knowledge that I will become proficient without ‘guessing’ how to do it.
